Ingredients
50g sauerkraut
1 tbsp vegetable őil
25g őniőn, sliced
1/2 large red chilli, finely sliced
20g sweet red pepper
1 tbsp vegan mayő
1 tbsp ketchup
1/4 tsp cider vinegar
2 slices white bread
2 tsp unsalted vegan butter
25g vegan cheeze
45g vegan salt beef
Instructiőns
Rinse the sauerkraut under plenty őf cőld running water, and then drain. Squeeze as much mőisture as pőssible őut őf it - yőu want it as dry as yőu can get it.
Heat the őil in a heavy skillet, and lightly sauté the őniőn, chilli, and red pepper főr a few minutes, until they begin tő sőften. Add the sauerkraut tő the pan, mix, and heat thrőugh főr a minute. Remőve frőm the pan. Turn dőwn the heat tő its lőwest setting, just tő keep the skillet warm.
Make the dressing by mixing tőgether the mayő, ketchup, and cider vinegar.
Butter each slice őf bread, and place őne, butter side dőwn őntő the hőt skillet. Add the salt beef, sauerkraut mix, and cheese, and then the dressing.
Turn up the heat tő medium, press dőwn őn the sandwich with a spatula őr slice, and cőők főr a cőuple őf minutes.
